Canaria. Among other aspects, its gastronomy offers an amazing product: the
cold cuts of Teror.
Even if there
are several products, the most famous are the chorizo of Teror and the sweet
morcilla.

chorizo of Teror
The chorizo
of Teror is made with the most tender parts of the pork: the bacon, the leg,
the mask.
Once meat
has been selected, it is chopped with a mixture of salt, chopped garlic, wine
and a secret recipe of spices. In addition, paprika may or may not be added. In
this way we can prepare sausage or red sausage. For the white chorizo ?? also nutmeg is usually
used as an additional condiment.
The ingredients are kneaded well and the result is
stuffed in guts. The
chorizo ??sausages contains
several sections, almost 5 cm wide. The texture is soft and juicy. The
suggestion is to taste it spread on bread.
There are different products of Teror that give its
special touch to the recipe. Each one has been able to keep the texture and the
genuine taste of the traditional chorizo of Teror.
Who tastes
the chorizo usually repeats. The proof is that it is distributed
in all Canary Islands and also in the rest of Spain or at international level.
Sweet morcilla of Teror
Among the cold cuts of Teror, we cannot forget to mention
the famous sweet morcilla. Even if everybody wonders that it’s a salty snack,
the sweet morcilla of Teror is usually served as dessert.
The recipe is different than others of the rest of the
islands or of the rest of Spain. There are different popular recipes for this
dessert.
One of these recipes says that the blood of the pork is combined
with some bread or biscuit, almonds, cinnamon, garlic, raisin grape, spices. Then
pasta is stuffed in pork casings and cooked in a water bath.
Once
prepared, they are stored until cooked, and usually cut into wide slices to be
fried.
